EATING KOHLRABI - Out of all of the veggies we grow in the garden, I think
kohlrabi must be the one that most gardeners struggle to use deliciously in
the kitchen.
I've grown my fair share of this oddly-shaped plant that looks like more
like a Pokemon than a vegetable. Here are 5 ways I've prepared it in the
kitchen.
𝗞𝗼𝗵𝗹𝗿𝗮𝗯𝗶 𝗦𝗹𝗮𝘄 - Grate it and use it as your slaw base instead
of other veg.
𝗦𝗼𝘂𝗽 𝗕𝗮𝘀𝗲 - You can purée cooked kohlrabi and add it to a veggie
soup base, or even in a soup featuring another veggie. I like to add it to
the base of a potato leek soup.
𝗙𝗿𝗶𝘁𝘁𝗲𝗿𝘀 - Shred it up and mix it with some breadcrumbs and egg,
then pan fry it with some oil. Top with your favorite sauce.
𝗥𝗼𝗮𝘀𝘁𝗲𝗱 - A classic method that works well for all interesting root
crops. The flavor chills out a bit and tastes much better in my opinion.
Mix with other roasted root veg.
𝗣𝗶𝗰𝗸𝗹𝗲𝗱 - I like dicing into french fry shapes and doing a
refrigerator pickle with garlic and black peppercorns.
