EATING KOHLRABI - Out of all of the veggies we grow in the garden, I think
kohlrabi must be the one that most gardeners struggle to use deliciously in
the kitchen.
I've grown my fair share of this oddly-shaped plant that looks like more
like a Pokemon than a vegetable. Here are 5 ways I've prepared it in the
kitchen.
๐๐ผ๐ต๐น๐ฟ๐ฎ๐ฏ๐ถ ๐ฆ๐น๐ฎ๐ - Grate it and use it as your slaw base instead
of other veg.
๐ฆ๐ผ๐๐ฝ ๐๐ฎ๐๐ฒ - You can purée cooked kohlrabi and add it to a veggie
soup base, or even in a soup featuring another veggie. I like to add it to
the base of a potato leek soup.
๐๐ฟ๐ถ๐๐๐ฒ๐ฟ๐ - Shred it up and mix it with some breadcrumbs and egg,
then pan fry it with some oil. Top with your favorite sauce.
๐ฅ๐ผ๐ฎ๐๐๐ฒ๐ฑ - A classic method that works well for all interesting root
crops. The flavor chills out a bit and tastes much better in my opinion.
Mix with other roasted root veg.
๐ฃ๐ถ๐ฐ๐ธ๐น๐ฒ๐ฑ - I like dicing into french fry shapes and doing a
refrigerator pickle with garlic and black peppercorns.
